I Love This Lunch!
Seafood Sandwich
Chop and combine in bowl: (equal amounts of each)
crab meat
red pepper
green pepper
Right before serving mix in:
sour cream (golf ball size)
mayo (just a little for consistency)
garlic n herbs (available from St. John Spice) - 2 tbs
splash of Italian dressing
fresh squeeze of lime
Serve sandwich mix on toasted multi-grain garlic bread.
Chop and combine in bowl: (equal amounts of each)
purple cabbage
green cabbage - chopped finely
grated carrots
raisins - handful
Dressing - In a separate bowl combine:
Mayo (golf ball size)
balsamic vinegar - enough to make a runny consistency
sugar (2 tsp)
Mix in dressing and store in cooler.
Ready to serve.
For BVI Charter: Pineapple and Brownies

Cut pineapple in half LENGTHWISE including green top
Cut out core and remove
Slice pineapple into chunks
Skewer with toothpicks
Serve with bite-size brownies
